THE VINEYARD "AUF SCHONFELS" – PLANTED WITH OVER 40 YEAR OLD VINES
The steep location high above the Saar, with its southeast orientation, warm slate soil, and sunny weather allows for high-quality grape material with high Oechsle degrees. Schonfels is a classified GROSSE LAGE (Grand Cru). It consists of two micro-locations: Saarburger Auf Schonfels and Ayler Schonfels.
Even during the harvest, individual Riesling grapes are sorted by quality by hand, then gently processed in the garage winery of the great-grandfather's house in Saarburg. The pomace serves as fertilizer for the next grape harvests, providing valuable services in the vineyard. Auf Schonfels allows for high-quality Riesling wines on slate soils in steep locations. The parcels are planted with old vines, all over forty years old. The must is vinified through spontaneous fermentation, largely avoiding the use of cultured yeasts, in the cellar of the garage winery. As the first winery on the Saar, the SaarWeinGut offers an unfiltered dry Riesling that is harmoniously balanced.
