Armin Appel, the current owner, joined the family business in 1996 and became cellar master in 2000. In 2005, he built a new machine hall. The vineyard area has grown from 2.5 ha to 9 ha between 1996 and 2012. In the prime locations of Saarburger Rausch, Ockfener Bockstein, and Ayler Kupp, more than 90% Riesling, 3% Rivaner, and 5% Spätburgunder are harvested from 10 ha of vineyard area. Vineyard work at the Appel winery is mostly manual labor, with up to 1,500 hours per ha under extremely difficult conditions. In artisanal tradition, wines are produced that reflect the potential of the Great Saar sites. The cool temperatures particularly favor the Riesling, which can ripen here from flowering to grape harvest for up to 140 days. This, combined with the rugged slate steep slopes, produces wines with a unique aromatic spectrum and a delicate, noble taste. The Riesling achieves a mostly light yet persistent and unmistakable style here, thanks to its minerality and pronounced fruit acidity.
